The nand/nandroid back up is an exact copy of the ROM you backed up. All settings and data are restored as if you never flashed the next ROM.
Example:
Flash ROM A, set it up to your specifications, back it up.
FlashROM B, it doesn't go well or you simply don't like it, wipe and restore your backup and you are back on ROM A as if you never left.
Titanium backup is a way to take your settings/data from ROM A to ROM B.

In my non-dev n00b speak:
Odex is a file organization system, it's the way files-namely the apk's-are organized. This is the way the stock ROM and any custom ROM comes unless the chef makes changes.
If the chef chooses to they can de-odex the ROM. This allows for customizations-mods and themes. There is a chance that deodexing the ROM can cause stability issues but I have yet to see any issues with OMJ's deodexed ROMs. I run that as my main ROM as I like to try out themes.

For one example (of many) an awesome theme IMO look at this:

To tie in what stang and I were discussing...for trying out themes the nand backup is an essential tool.
What I do is install OMJ's deodexed ROM and set it up entirely. Then I back it up. That is my "blank" ROM.
Now I can try theme after theme and if I dont like it I just wipe and restore and I'm back on my "basic" ROM ready for the next theme.
When I find a theme I do like (Riptide's that I linked) I also back that up with the theme installed as well.

now the program i should use is ?

i installed OMJ's odexed so would not be able to flash themes un less i flash the deodexed rom....Correct.

Well to create a failsafe copy of your ROM boot into Recovery and create a nand backup. This is in case something gets fubared when you flash. Select backup/restore if you are on amon recovery. Then you flash the theme like a ROM but dont wipe.
You are installing the theme over your ROM so no settings will be changed, it'll just look killer

No difference. Most, but not all modifications and themes tell you to use a deodexed ROM.
So to switch ROMs you have two options for transferring data:
1) OMJ includes Titanium backup in his ROMs. This has a multitude of options for backing up data and apps. Apps are self-explanatory. The data/settings you chose to back up are up to you but I have some suggestions.
[DESKTOP]HTC Sense 1.00 will back up your Sense settings/layout. Some widgets MAY need to be replaced after the restore but your basic screen set up should be intact.
[BOOKMARKS] Internet 2.2 will back up...guess
[E-MAIL ACCOUN...TTINGS] Mail 2.00 will back up your non-google mail accounts.
After that you are on your own

2) If you look at OMJ's Post #3 he tells you how to pull the data.img from your nand backup. This is the easiest/quickest way to restore your data but it is a touch above n00b level. If it seems over your head then just go with Titanium for now, that post will make sense to you in no time I'm sure.

great thanks .....I will give it a shot when i have sufficient time on my hand incase i mess up .
Quick ? does the PRI version improve the phone an if so how does it improve it...im on 1.34_003 I see people talking update to 1.40 would that be recommended?

When you unlocked nand you got knocked back to the 1.34 PRI.
If your phone if performing well I wouldnt worry about it.
Getting back to the 1.40 PRI is basically based on luck and location.
It helped me but it doesnt make a difference for everyone.
If you want to give it a go try ##3282# and do a reset.
You will need your MSL which you can get from Sprint by calling and asking them for it. On a rare occasion you may run into a dink who wont give it to you, just call back.
This will most likely take MULTIPLE attempts. If you get it on the first shot drop everything and run to the nearest store and buy a lottery ticket
If you do get updated then you may need to call Sprint back as they sometimes need to update your device on their end so you can make calls while roaming.
