I just installed this rom from an older 2.1 NRG rom. It loads the Touch Pro Logo then Reboots.... Touch Pro Logo then Reboots.... I tried a different 2.5 rom and got similar results. Did I miss something in the last 2 months?

IMO, yes, The variable is the manila version 2.1 vs 2.5.

In fact I can't even load a new rom anymore. It reboots / freezes too quick. How do I get it to boot into the bootloader screen?

Put the .nbh file on the root of your SD card. Then with the card in the phone, Hold down the power button, Volume Down, and Hit the reset with your stylus. That will put you into Bootloader Mode.
