Trying out your ROM based on Darren's recommendation.

I must be doing something wrong.

Stock -> DK28 -> Epic Experience and now I want to go to midNIGHT ROM.

Backed up my data using the Clockwork backup. Got the zip on my SD card. Wipe user data and zap cache 3 times each. Install from SD card and I get the new ROM. If I restore from my backup I go back to Epic Experience (last ROM). How do I get the new ROM with all of my installed programs, email accounts, etc?

If I am reading this correctly...you do have midNIGHT ROM loaded. To verify, go to menu/settings/About Phone.....You should see midNIGHT v2.0.7 under "Build Number".

Just to be sure, is this what you did to restore?:
1.) Boot into ClockWorkMod
2.) Scroll Down To: backup & restore (enter)
3.) Scroll Down To: Advanced Restore
4.) Scroll Down To: select the backup you wish to restore from
5.) Scroll Down To: Restore data
6.) Scroll Down To: Yes - Install Backup Zip File (enter)
7.) Done! Scroll Down To: ***Go Back*** (enter)
8.) reboot system now (enter)

I hope this helps. Also, when flashing to a new rom, you should Wipe Delvic as well.

I have seen Davlik mentioned elseware. I do not have that on my ClockworkMod menu. ClockworkMod is 2.5.1.

Sorry bro - gave you the wrong info earlier (I edited my post with the correct info). Anyway, once you have the zip file loaded on your SDcard follow these steps....

STEP 1:
1.) Boot into ClockWorkMod
2.) Scroll Down To: backup & restore (enter)
3.) Backup (enter)...takes a while
When backup is complete...
4.) Scroll Down To: wipe data/factory reset (3x)
5.) Scroll Down To: Wipe cache partition (3x)
6.) Scroll Down To: advanced (tab) wipe delvic cache (3x)
***
7.) Scroll Down To: install zip from sdcard (enter)
8.) Scroll Down To: choose zip from sdcard (enter)
9.) Scroll Down To: Location you placed the new rom zip (enter)
10.) Scroll Down & Select ROM Zip File (enter)
11.) Scroll Down To: Yes - Install ROM Zip File (enter)
12.) Done! Scroll Down To: ***Go Back*** (enter)
13.) reboot system now (enter)

Check Install After Reboot:
Menu>Settings>About Phone>Firmware version = Should Show New ROM Just Flashed!

If you already did a backup of your previous rom prior to loading midNIGHTs ROM, then skip the part about backing up again. The backup that you had done previously will be fine.

Well yeah, if you restore your backup it will restore the Epic ROM. lol
You would need to restore "DATA" ONLY. I don't actually do that personally but I know it works. Just remember to restore "DATA" ONLY and you should be fine. After you flash my ROM DO NOT DELETE THE DATA CACHE. Doing so will result in the deletion of some pre-installed apps.

Thanks for the step-by-step. I was doing everything but the Davlik wipe. Still, I went back and followed you're instructions step by step. Everything looks great. New ROM verified after flash but before restore. After restore I'm getting Epic Experience back. I know I'm doing something wrong. Maybe I'm backing up incorrectly and am getting the ROM system backed up too by mistake.

Sounds like you are doing a system restore - Are you sure you did the following after flashing midNIGHTs ROM?
STEP 2: (Restoring data)
