Couple of options: 1. Set up a gmail account to pop your email and you can then configure it to send as your other email address. 2. Just configure the SMTP settings with bunk info and be sure never to send from that account.

Re: Forcing mail to NOT use SMTP servers
You can configure the SMTP side with a throwaway gmail account... or even a gmail account you use regularly. It doesn't need to be on the same system as your POP account. Just make sure you send from another email account by default.
