I think that would work, except that I want some of the software installed like Sprint TV... and I can't figure out how to unlock the ext rom to pull the cab files off of it.

You'll probably find that it won't let you abort the customizations like it used to on the Mogul or Touch. If that's the case, you'll skip them and it will just trigger a hard reset again on the next boot.
You can see the link in my signature for a viable workaround if you want to keep the Sprint stuff in tact but still want to do a little housecleaning.

I just change the properties and select hidden to hide them from showing up on the start menu. I have a lot of space left, so it doesn't bother me (yet), so I still have them there.

Why not put on a different ROM? With the higher memory settings, the custom ROMs completely change the experience. I was hesitant, but now am a flasher!
Just get the $7 Sprint insurance just in case!
