Last night, I backed up everything with titanium and clockwork.
Then clockworked back to a image right when I installed 2.2.1
Tried to use titanium to re-install everything and it was TERRIBLE. I had to click buttons on all 242 backed up apps? After 34 of them, I rebooted, clockworked back to the back up I made above.

The phone ran sweet all night and this morning. around 10am though, it went back to hanging a lot.

I guess I didn't click "post" on my phone. Anyhow, I re-re-re-flashed my phone to DI18 and then upgraded to DK28 and it was cool for a minute or two, but after a couple days it was slow again with the main screen freezes still.

I don't know why you are going all the way back to DI18. You can flash DK28 with Odin and skip the DI18 step altogether. If you are still having problems with the screen freezing then I suggest flashing back to DI18 and taking it to Sprint for a replacement. If you have insurance they should do it for free. If you don't have insurance they'll charge you $35.00. I had an issue with the menu button only working when it wanted to and they gave me a brand new phone (well worth the $35.00 I paid IMO). Just tell them that the problems started after receiving an OTA update and that it happens intermittently and they probably won't even bother to try and recreate the problem in the store. Also, make sure to tell the Sprint rep that you want a new phone. Don't let them give you a refurb.

Holy Heimdall! Maybe having 242 apps is why your phone is running slow.

cause if you read the other thread, odin doesn't validate the DK28. I tried bringing the phone back to sprint for the screen being loose and they said "our demo is loose. so tough." The sprint store is over a 2hr round trip so I don't like wasting my time driving there.

well, my iPad has a billion apps installed and it hasn't really ever hung. Plus, if the apps aren't running, your point should be invalid.

Have you tried this....[Stock Flash][Odin]Dk28 Extended 12/05/2010 inc. Root,GPS hack,Clockwork+Redir. - xda-developers

It's a Stock DK28 Froyo Rom with Clockwork Recovery included.
1 Flash, doesn't get any easier. I've used it several times now, and it runs great. Then if you want to try Custom Roms, you just flash one using recovery!

I'm trying to stay away from custom roms. This would mean I would have to start over again, again, again. Plus, I don't know anything about EXT4 in regards to the phone or what I should be doing about it.

EXT4 is no big deal. If you flash Clockwork 3 it will automatically reformat your phone for EXT4 and then you can flash a new custom ROM that uses it. They are faster and the whole thing about memory lifespan and data loss has been way overhyped. Go to Lost and Tired « My Reality Autism and click on "Android Development" at the top and watch the video on how to install EXT4. Its actually very easy.
