Nothing will really change the "default" interface of WM. Sperate interface apps can be installed and used, like SPB Mobile Shell; PointUI; iFonz and Throttlelauncher.
With Wisebar you and "skin" the interface to be something else. But ultimately down down at the core, the actualy interface of Windows Mobile can't be changed. I myself use SPB Mobile Shell, to me it's not a big deal to tap the bottom left soft key (that's what I set for Mobile Shell) when I power on or soft reset my phone. |

So then how did HTC get to make a custom today screen and look for the windows mobile default screen for the HTC Diamond? Is that also just a veil of a skin that's put over the actual windows mobile screen?

The windows interface does load. You can leave the default soft key as the today menu and bring up SPB Mobile Shell or if you drag from the right of "Start to the middle of the screen you will have 3 popups and you can pick which Mobile Shell window to navigate to.
