If you have a storage card just back everything up on it
and the install on your new phone.

Or you can also do it through activesync. Paste the files
to a folder on your pc then install on
the New touch.

pimBackup is pretty quick and easy i used it when i switched from my PPC-6700 to my Touch back in December. Flawlessly i might add.

seriously i would install it on the new touch, then you dont ever have to worry. Its only saved me once, but i mean once is enough for me. its done its job.
