There's a few other threads like this already.
All of the ROMs are pretty stable, its just a matter of what you want and don't want. So the best thing you can do is to look at what they've included and what they've removed and pick the one that's closest to your liking.

If you go with a ROM that includes UC, you can get a better tweak out of a ROM since that would mean you could tailor UC to install apps off your storage card (which reduces the time it takes to recover from a hard reset). |
