Its all personal preference. Look at the features and figure out what YOU want.
I agree. The ROMs are more or less similar, but the quirks of each chef makes them special. You have to find the one that fits the bill for you.

I personally like a minimalistic approach to my ROM (don't confuse this with clean though), but like to include utilities that make the everyday experience better. If you go with a ROM that includes UC, you can get a better tweak out of a ROM since that would mean you could tailor UC to install apps off your storage card (which reduces the time it takes to recover from a hard reset).
