i'm guess each has some sort of "rom protection" since when I run prepit i end up with an oem folder containing a folder named "BETA, create your own rom" during the dump process, all the files are created in the dump folder, but they are not placed into an oem or sys folder; then all the files are deleted when the dump finishes

Yes, that is the sign of having stripped information used to deconstruct the rom.

There are ways. None so easy as working with an untampered rom, however.
