Would it be possible for someone in the know to lay 6.1 over a stock ROM so we aren't starting with such a clean slate? I guess I'd like for the phone to look like it does when fresh out of the box but with 6.1 on it. Is that doable at this point or something that has to wait awhile?

I have exactly what you are looking for. I'm uploading to megaupload now. I will post a link to it here when it is done.
note-- You will still need to use the registry tweak mentioned on page 2 to fix th dialpad popping up issue.

EDIT:: Is manilla a gps app? If it is then you are going to have a really hard time getting it to work because the touch does not have gps just yet. You should already know that though.

Manilla is tflo v2. The cab thats currently out is for vga devices and needs hardware acceleration, so its pretty far from being even bearable right now.

Before i flash this i wanted to make sure, All i need to do is unlock my touch and flash the ROM correct? no additional steps needed?

That is absolutely correct. You will need to install imcokeman's hardspl and unlock the phone and then you will be good to go.

NOTE: This will HARD RESET your device. Make sure you back up everything before you flash.

EDIT:: This will NOT work on your Mogul.

hmmm, the Advanced Config app change of the Show on title bar to Battery seems to fix the Dialpad ... you mentioned "Both" fixes ...?

I saw he post about Windows Live being in SYS_OPTIONAL. One question I have is o I need to move all three folders to the SYS folder if I want to install it to my device?
