There is a thread going on about ATI Drivers that have a side effect of fixing the blurry pictures issue. I can't confirm the results but thought I'd link to that thread in case it helps anyone:

Just wanted to say I am also very dissapointed with the picture quality of my Touch pro. I find it almost impossible to use this as a camera or for video capture. The only time I can get a decent shot is if I get an up close piture of of something by bracing myself, tying up my hand to something, not breathing, then pray. I have had many other lower end 1.3mp phones that were much more impressive.

My problem with the camera is that it takes so damn long for it to snap a picture. I have tried different methods of trying to take the pic such as the touch only, touch + press, yet they all result in a huge delay to take the pic. By the time the pic is taken the object has moved out of the screen or your hand has shaked.
