I used to have that issue with the HTC text messaging app, where I couldn't send a message occasionally. I switched to handcent, and didn't have that problem any longer. I'm on CM6 now, using the stock messaging app, so, I haven't had that happen in a long time.
When I was using a sense rom, I remember the notifications playing through the speakers, when I had them plugged in.

Sometimes notifications play through the headphones and then other times it will play through the speakers. Weird.
Texting issue still happening...

For #2, and the text notification not going away, it's a Launcher Pro issue. I stopped using the text message quantity in the bottom bar solely because of that reason.
