When you're in a conversation, hit the up key and highlight the individual message you want to delete (it'll be highlighted light blue). Click on Menu and then click on Delete and it'll erase that message from the conversation.

In the past, I've deleted messages the way that was suggested earlier (switching to classic mode), and it'd mess up my conversations because the individual message would be erased but it'd still exist in my conversation. This was with the earlier builds of 6.1 with the ROM kitchens on the earlier devices. It seems like this version of 6.1 is a lot better at rethreading conversations if there are problems.

Re: Help with cemail.vol/ text messages questions

well holy sh$t that works!! I tried to do that before but by highlighting it the way you would when you copy and paste.. but when you do it the way I was trying, the delete option is greyed out so I didn't think it was an option... many thanks on that tip!
