I looked around @ the strings in the DLL/EXEs in the Palm applications.
The string "X-VzW-MDN" does appear in what appears to be a message that can be sent to an error log. I was unable to find out how to enable the log or to find out how to set the value. I'm guessing the app either auto detects Verizon or there is a registry key to enable Verizon specific behaviors.

I then looked around about the MMS protocol and MMS gateways - there are a few string resources in the MMSStack.dll that might be relevant - specifically a string "No From" which is put into the header if there is no "from" address (not sure if that is the MDN or not). There is also a string resource "/TYPE=PLNM" which is appended to the MDN in the MMS gateway protocol. I tried adding by phone # to various places in those strings without much luck.

I think the easier approach would be to find a Verizon customer with the Palm SMS application working and look at their registry.

I did look for what would be "obvious" registry value names in the DLL/EXEs, but got tired of looking (and trying). I decided to focus on finding out why the standard SMS application wouldn't work for me instead.
