No flash with nk.nbf and ms.nbf unless you want to use a custom ms.nbf

Then yes, flash only the nk.nbf w/o the ms.nbf. Make edits and then reflash your personal ms.nbf. What's in Bell's version?

I'm not too sure it installs a bunch of crap ( some themes with beavers in them). I have used the phone with a different ms.nbf and it worked fine, actually that leads me a to a question, how come even after a hard reset my ppc6700 knows what phone number it has ? there's no sim card or anything. How come I don't have to re-program my phone every time I flash ?

Colonel - Is it safe to assume I can skip the customization screen if I don't want vzw's junk to install?

You can select your carrier and then it will install the rom customization based on the carrier you select.
