Yep, to save your PIM information (contacts, call logs, SMS logs, calendar stuff), use activesync to sync with outlook, or get PIMBackup (free) from www.xda-developers.com. You can also use online services like Mail2Web.
If you use PIMBackup, don't forget to save the backup file to SD card or your PC before flashing.

to save your contacts use PimBackup. Save the file to your sd card and whenever you hardreset or burn a new rom you open up PimBackup and select restore instead of backup.
I have my info backed up 3 times a week. It saves contacts, recent calls, text messages, sms messages and probable other stuff I dont even know but all the important stuff. As far as saving your pics or any other file that you want after reset. Just copy and paste them either to your pc or sd card and replace when your done. If you have your camera copying files to sd card already your all set as the sd card is an external memory and wont be erased during anything. You can remove programs not built into the rom by going to settings\system\remove programs from start menu.
