Unfortunately Microsoft didn't design the phone skin to be easily changable. As it is now you can select one phone skin in BuildOS (look in the "Phone" group) and you can toggle back and forth between that and the native skin by changing a registry entry:

[HKEY_LOCAL_MACHINE\Security\Phone\Skin]
"Enabled"=dword:1

Changing that to a 0 will disable the custom "skin" and put the crossbow dialer up.

Phone Dialer Skin Selection

I only see one selectable option in the "Phone" group titled "SIM Toolkit". From what I've read there are supposed to be multiple phone skins options that can be selected (one per build). Am I looking in the wrong place, or do I need to load it from somewhere else?

The other phone skins are in the PPCGeeks_OEM.rar package available in the first post of this thread. Do not extract the rar file after you download it. Simply place it in C:\BuildOS (or wherever you chose to extract the kitchen to). Then run BuildOS again and you should see a lot more stuff!
