Email & Web Smartphone Plan Vs Unlimited Data

I was positive I'd find a good answer to this question by searching the forum, but alas, my searching skills have failed me. I can't really find what I'm looking for. Apologies if this has been covered before.

I'm trying to figure out the difference between VZW's two smartphone data plans. As I understand it, you need the 'unlimited data plan' for Exchange activesync (which I have on my Omnia for my work email account).

But what about for my wife who just has Google email? I was considering using Google Sync for her contacts/Calendar, but am worried I will get raped by some type of charges since I signed her up on the less expensive 'Email & Web for Smartphones plan'.

Can she use Google Sync? What about other Data using apps (pocketwit, Qik, dashwire, etc?). These apps all use Data, but are not technically Email & Web.

Hopefully someone can shed some definitive (and possibly first hand) light on this. Thanks.
