You might checkout Palringo discussed here:

http://forum.ppcgeeks.com/showthread.php?t=3971

It's a push-to-talk service that allows users to send text via voice or keyboard input. Also allows for group chat and picture sharing.

late,
Coz

That is a good app for Instant Messaging, but what about actual Text Messaging? Anything like this for using text?

I think we need you guys to be more clear... I understood the OP wants an app to basically dictate a text message, so it gets typed as you speak.

I use www.jott.com I gotta say it's the best one out there. Nothing to install on your PPC and works with any regular phone. Best of all, it's a free service. You can set it up to send both text and email messages to whomever you specify in your jott contacts. To use it, (after you setup the account) you dial their 800 number and it asks "Who do you want to Jott" and you say the contact's name, then dictate your message. A short time later, the message is converted to text and sent out. Coolest thing I've found so far!

As far as voice to text message, I don't think there is something like that available as of yet...

Sure it is... just enter into your Jott contacts and when you set one up, Fill in the Person's name (lets say Julie) then enter Julie in the field that says "Sounds Like" and enter Julie's phone number in the "phone number" field. If you enter both a phone number and an email address for Julie, it will get sent to her email first and might not roll over to the text message so it would be best to have one for "Julie Text" and "Julie mail".

BTW, I use this both on my 6700 Apache and my 6800 Mogul but it will work from any old fashioned home phone as well.

EDIT: on a side note, when Julie receives your text, it will not come from your number but from the Jott service so make sure either Julie is aware of this fact or you say at the start of the message "this is from -your name here-"
