Re: Spb 2.1
I've tried SPB MS with the diamond theme and WM7 theme, and they both work fairly well. My main gripe is the bundled SPB contacts app. I use iContact (which rocks) and can't seem to get past the SPB contacts app when I view contacts. Personally, I'm a fan of the HTC Home plugin. With it, I can add a little fanciness to my today screen without messing with core WM functionality.
To answer your question about removing SPB MS, all you need to do is go to Start > Settings > System > Remove Programs and remote MS. A hard reset will remote it, but at the cost of resetting you to your last clean flash. Overkill in my opinion.
