Upgrading isn't too difficult if you're running Windows XP. Running Windows Vista becomes a lot trickier, but not too bad. Take a look at the sticky posts on flashing new roms. The BuildOS ROM cooker is a lot better than what it used to be, but it still isn't noob friendly. You may want to see if you can grab an already cooked WM6.1 ROM. I've been using my own cooked ROM for less than a week, and so far there haven't been any major differences. There are a handful of little things that make it nice for me, but that is because I'm picky.

I've flashed many times under Vista using both stock and kitchens. I just ran the RUU in XP Compatibility Mode

There are a couple of updating/flashing guides at the top of the HTC Titan Upgrades section that should give you a decent grasp of how to do it and the rest is trial and error. I recommend Olipro 2.40 bootloader and the Official WM 6.1 ROM is out so you can try flashing that before working with custom roms.
