guide on installing custom ROM

I will be getting the Sprint Epic 4g phone next week.. i am coming from a WinMo phone so this is very different for me..

i was able to read/understand the guides on how to Root and install Clockwork..

but i am lost at how to install custom ROMS (from XDA) especially the steps requesting "wiping all data and flashing the ROM 2x"

is there any guide which goes over all this information? from where to save the files, which commands to use etc..

i assume i am not the only one with this question.. and should be helpful for future users as well..
