I'm not sure how to set it to charging as default, but as soon as I figure it out I'll let you know.
I do get the button choices, but even if I choose charge only it seems to mount the card.

It isn't a huge deal, since, like you said, I can click to unmount, but it would be nice if I could choose the default action.

There's nothing in the notification bar for this option

Is there any downside to leaving the phone with USB debugging enabled all the time?
I DO have it in USB debugging mode for PDAnet. I tried turning that off and rebooting but no luck. Perhaps it's the 3rd party cable, I'll have to try the stock one when I get home.

Funny thing is I have one of those retractable cables also, and when I use that cable with a USB charger left over from another phone, I get the mounting options notification!?!?!

I would definitely try the stock cable that came with the phone. If you have different results when using different cables then more than likely your cable is bad. Its possible that one of the pins isn't completely connected on that old leftover cable you are using, or one of the wires is broken.

Stock cable works flawlessly. Wow, I didn't think they really made that much of a difference.

Bummer is the retractable cable is brand new, and when using it to mount I get an unrecognized disk error on my Mac...

Its not a surprise..I ALWAYS end up having issues with retractable cables..they work for somethings, but for other things they just never seem to work..I had a printer hooked up using a retractable cable...didn't work..spent hours debugging it..tried another wire..worked flawlessly.
