Even the official firmware release won't be "brickproof" as you could still run into certain problems while doing the firmware upgrade. I can understand your hesitation, though. I too was somewhat diffident when deciding whether or not to flash to CC20. But for whatever it's worth, the odds of bricking your phone are minimal and most users who have done so have had great success. Don't be intimidated by all the flashing problems you may read about here and over at Modaco - Remember, people tend to comment on forums more when they have problems than they do when they don't. So of course there are going to be more complaints and problems about flashing than there will be about users having a successful flash. If you decide to do it, just make sure you follow the instructions and have all the drivers installed. If you do this, you should flash without a hitch.
And if, by small chance, you do brick your phone, just take it back to the store and get a new one. It's especially easy if you're still within your first 30 days.
