I have not had any issues with 2.1. I have read some stuff about video performance not being the same though.

And youtube is ridiculously slow for some reason, not all the time but enough to be annoying.

That would be the video performance I was speaking of. I don't watch YouTube much though so I don't notice it.

If one were to use the sbf to downgrade to 2.01, which completely wipes the phone, will they still be able to download the apps they purchased from the market for free?

Yes. Those are tied to your Gmail account.
