If you want a sholes rom, after rooting you can go back into SM Updater and pick one. It will ask you if you are sure you want to flash it. It will then reboot and begin giving you the options of what you want in the rom. You don't have to wipe data to run 2.1. You only lose you apps and data if you wipe, but they should be backed up if you did a nandoid backup or if you backed them up with Astro. SM Updater does create a nandroid backup for you before it begins flashing. All you have to do to reinstall it is go into recovery mode an select to install the latest backup. You can also choose to install other backups or a rom on your SD card. I finally figured most of it out last night after messing with it for a while. If you want a sholes rom, all you have to do is open SM Updater and choose. Once you choose which one you want, it will begin to DL it for you , and when finished, it will install it with your approval. Pretty much all you have do is accept anything that it wants you to do.
The only thing about the sholes mod is that once you root and flash the first time, it will break/change your recovery mode form then on (or atleast it did mine). For some reason, it will not let you create your own nandroid backup from the recovery. It will only create one for you before flashing to a new rom. One good thing about the SM Updater is that it will let you opt to install the 2.0.1 stock rom and unroot if needed.
