My understanding is that it's part of the rooting process and your boot screen will now have a recovery option (assuming your rom has a recovery.)
I haven't rooted yet so I'm not pro. Thats just he jist of my understanding of it from lurking around. Nandroid is basically a backup/restore feature, that allows you to backup all the contents of your phone (including apps and personal settings) to a file on the SD card. Said file can be selected later to restore your phone to its previous state. The way most ROMs are flashed at this point is by putting a file modified backup file in your Nandroid folder and selecting that file for a restore.
