I'm running 21895 with sense 2.1. Is there something i can use to make the homescreen clear. I tried using pegasus clean slate and it doesn't work. I am not crazy about having the tabs on the home page. Or is there a way to take these off?

Try going to settings, clocks and alarms, then the more tab. Make sure the "Display the clock on the title bar all programs " tab is unchecked.

So far the only issue I have is that YouTube crashes forcing a soft reset.

Yes, I noticed this also. I would prefer a lite rom, titanium only as I usually end up running mshell anyway for the memory savings. Speaking of memory anyone having leak issues? The 21895 builds using either 2.1 or 2.5 leaks memory badly for me. Another reason I'd like to try the lite titanium only build.
Battery life is really bad for me also. I normally lose 10% overnite on standby, I lost 55% and my phone was dead in the morning.(with sense off) Another reason I'd like to try the titanium only build.
