Pim works great.
I get occasional issues with SPB. Kinda sucks when go to restore and sometimes it won't restore completely. I use to love Sprite on my 700wx. Seems to work ok on my touch. |

If I install a BUNCH of programs and want to basically make an IMAGE of this thing, what Backup Util would suit my needs?

I would use sprite. Don't know if they have trial ware. I'm sure there are hacked versions about because some custom roms come with it.
