if i use sprite backup will it back everything including my installed programs

yes it will, but you don't really want to backup your entire device like that if you're flashing a new ROM because it would also copy any registry edits which would override the ones in your new ROM

if you're looking to flash a new ROM i recommend PIMbackup, it will backup your contacts, sms, and emails
