adjusting email/txt/vmail counter on today screen

tried searching so don't yell at a noobie question

where should i look to change which programs open when I click on either of the 3 message counters on the today screen?

and while i'm at it, when I am on the today screen (i have SMS-chat) and I receive an email the pop-up bubble notifier comes up saying i have a txt message and to reply/dismiss whatever the options are. the right soft key turns into dismiss i believe, is there a way to change the option that comes up to SaveRead?
