Text messaging on the Sprint Touch..

From what I've seen from friends' who have this phone, there are a few different ways of texting.

However, the default FULL virtual keyboard's keys are absolutely tiny, and would require a stylus. Can I install any virtual keyboard (ie TouchPal) and use it?

I am a complete noob, I haven't even got my phone yet, should be here on Tuesday. Thanks!

Yes... you can use third party software as your input choice on the Touch.
TouchPal is one of the more recommended softwares out there. It's also the one I use (though I haven't tried many cause I'm only using freeware).
Just head over to their site and it should be easy enough to get yourself up and running in no time.

Will I also be able to tell the phone to never use predictive (T9) text, which I HATE.

I hated T9 too, until i got my touch. I am currently running the Diamond Keyboard. My favorite is the full screen keyboards. i think its spb that has one. only thing is you have to hold your phone in landscape to type.
