Yes that should work as long as the adapter they are giving you converts from 2.5 jack to 3.5 your touch is 2.5 most fm transmitters have a 3.5 jack. All the transmitter does is send the wireless signal to an fm frequency you pick

The adaptor shown toward bottom of eBay link looks like the one I use for audio output to earphones or FM transmitter. Should work, nice price too. For long trips, you should also grab an adaptor that not only lets audio out, but also lets a battery charge in.
