Manually installing Sprint customizations?

I'm trying out my Touch after switching from the Mogul, but I'm surprised that after a long while of searching many different terms, I can't seem to find any discussion on stopping the Sprint customizations before they start. Is there no benefit to this for the Touch? Is it possible to stop it and manually install just what I want?

Nevermind. I just found the customization files and am manually installing what I want. Sorry for the bother and extra post.

I'll bite, where are the files, and how did you get the system to let you install them manually rather than automatically on a hard reset?
