It's all relative to what sort of use you're trying to get out of it. I think that
Microsoft Voice Command is one of the best things to install on the device since it saves you a lot of trouble from having to press buttons and type names.
Opera Mini 4 is a great browser if you want the full internet in your hands. The rest is really all relative to what you need. I'd recommend downloading a better keyboard to make typing easier. My favorites are
SPB Fullscreen and
TouchPal. For other suggestions, browse the forums to get ideas.

First: if you have Windows Vista, sync your device using Windows Mobile Device Center (you have to download it); if XP then you're using ActiveSync.
You can use these sync tools to add software to your device when it's connected to your PC. Alternatively, you can browse to a site via your mobile device, and download directly to your device and install from there. In order to do the latter, you'll need to download .CAB files, which are what is used to install directly onto the PPC.

There are some tweaking tools you can download; others go into the registry manually and do some hacks. In order to do these things, you'll definitely want to search the forums to see how it's done so you don't mess up your device.
Try
HHC to tweak the HTC Home stuff. There's also many threads about how to tweak the Touch Cube.
Just browse around and you'll find answers
