a baud rate is basically the bandwidth. It is the amount of data pushed at bits per second. So the higher the number the more data that is being pushed.

we have always used 4800 for the GPS. for the amount of data in a gps signal, which is just coordinates and time, 4800 should be more than sufficient, I think anything higher would just be a waste.
