well you can remove the .lnk shortcut from the root/windows/startmenu/prgrams directory and that will remove the link in the programs window.
that will not however disable files with extentions from being opened by the program or disable the program as a default for something. some of this can be done however via registry edits. if youd like to post the programs you wanna to disable i could help you more in depth-ly and possibly whip up a cab thatd take care of the reg edits. or pm me
