Manilla is a the code name for TF2D and TF3D, I belive that is the codename for the framework behind both of those interfaces. So, for now don't worry about manilla.
Touch Flow 3d (TF3D) is the graphical frontend for the HTC Diamond and HTC Touch Pro. TF3D uses the hardware acceleration available on the graphics *card* to create those fun little effects you see when you slide stuff around. Clock flipping animations, sliding actions, etc etc.
Touch Flo 2d (TF2D) is the less resource intensive version of TF3D. It has many of the same features. It does not have all the bells and whistles and nifty little effects that TF3D has. This looks almost identical to TF3D and if you want a speed up, this is probably a good choice for you. You just won't get some of the fun visual stuff like the txt messages scrolling all pretty or contact pictures flipping around. Stuff like that.
HTC Home (the pic you posted) is the one of the first decent Today plugins that HTC furnished. I want to say it first came out on the HTC Touch (not touch pro!) and was also on the Kaiser/tilt. There are several versions of this plugin available as the software varied quite a bit as they used it on several different HTC handsets, each handset had a slightly different version. (More tabs, less tabs, etc) This is probably the least resource intensive version that provides similar functionality to TF3D/2D. It has 0 visual bells and whistles and is limited in what can be done to it.
