I think the emoticons that you get when you press the SYM key are just to show you what you're sending. They won't come up like that in the text messages. At least that's my experience.

On a related question: Using the soft/on-screen keypad (phone pad/T9, for example), is there a short cut way of typing emoticons rather than hitting symbo, choosing ":", then symbol again, ")"?

try smip, it is a whole kb of smileys.

I think they will show up as a smiley face on the other person's phone, but not on your own Touch Pro. With that symbol shortcut on the keyboard, at least you can see what you are sending for 6 basic smileys.
