Question how do I customize or redo an ATT touch pro

I just got an att touch pro that is unlocked from my organization that I will take overseas in a couple of weeks. I put my att prepaid sim in and it works fine and overseas I use my sim for the country I will be visiting.

I have a few questions.
1. When i turn on the phone I get the home page and other pages with all kinds of links to att apps etc that don't work. How do I rebase line it to just a generic touch pro or how do I modify the looks and links to get rid of the att stuff?

2. Seems like the gps is looking for an att app to work. How do I get it to work without att.

3. I have been using a htc touch for the last year or so (I get the offices hand me downs to travel with). the touch is very intuitive and works pretty well but my new touch pro is not. Any help on what to install to make it work nice and clean.

4. Where can i find what functions are available on the phone.
