looking to take the dive into cooked roms

I just got my Touch Pro 2 from Sprint. It is stock except for my contacts. I'm not impressed with how the TF3D looks as is and need to change it to something better. I have never used anything but stock roms so I have no clue as to what I need to do. Can some point some links out with step by step instructions on how I can do this? I like the way the Juicy rom looks and think I need the newest manilla. I don't know how to unlock the phone if I need to so I need instructions for that also. Please excuse my ignorance on the matter. Also, is tethering allowed with Sprint on this phone, I used the Internet Sharing hack on my touch pro and would like to use it with this also. thanks for any help.
