Help: Detailed update procedures for the number-written-in phone

My HTC6800 is a Spinish one and has a low-version in RADIO and ROM and I wanna update them. Last time I unlocked the phone and updated to the Sprint English version but the phone number lost as it was written into the phone. But it I donot unlock it, it's impossible to update to the rom i want.

Therefore, anybody can tell me the detailed update procedures for the number-written-in phone?
