This depends on if you are using Pocket Outlook or another app like the Windows Live application. Either way, you change that somewhere in the "settings" or "options". I know on the Live app you change the "Sync Schedule".

From the home screen, go to the MAIL tab. Then Select:

Inbox - Menu - Tools - Options ... - [Select your email account from the list; likely the one followed by an '*'] - Send and Receive Schedule. Modify the settings and save.

That shoud do it.

I'm on my works Outlook(exchange). It's done through active.-sync.

go into "programs", click on "Activesync", than "menu" and you will see "schedule". you can set your schedule to check your e-mails as they come in or any interval you want. You can even chose what day to check and when. Meaning on weekends you can have it check less frequent.

I just selected "as items arrive" in the mail manager and then I just get my email as it comes - but I DO have windows live email - that might be the difference, but I thought you could get something smimilar doen with exchangea nd direct push.
