QUESTION about ROM. on the addon packs that he has listed, how do you just add those onto the core? just run that as a backup restore as well? (after you restored the core obviously?)

Think you mean as an "update". Just add the zip's to your SD card and run recovery mode, select sdcard: choose zip and you'll see the zip file there to run it.

OH OK so basically it's the FILE that I'm flashing to that says if it takes over the whole phone (ROM), or just updates a little bit (addons).

Wishing I would have attempted to MOD my WinMo phones now. This is fun...
