Question about rom signed zip packages

Can I modify an existing one by simply dropping in updated bootscreen files, rosie.apk, etc.. and signing the existing rom zip?

Any good guides on how to do one if not, and/or how to use Flipz kitchen tool to create a rom?

I made some of my own transparent lockscreens and i just used winrar and dragged and dropped the jpeg where the other jpeg was, replacing it. Didnt extract or anything and was able to update.zip without resigning. Worked fine.
