I use FX Camera. you can see a slight difference in the photos not to mention a few options on it as well

I mean, i'm not expecting to be able to shift the depth of field or set shutter speed priotity of f-stop priority or anything. I just want to play around with setting. Also, there are at least 5 apps i've seen.

I'm with athlet1c and use FX Camera. I think it has more options than any other camera app out there on Android. I like the idea I can click the screen to snap a photo compared to pushing the trackball, which isn't as cool but now it's making it more difficult to accomplish one handed and has the possibility of slipping when pushing on the trackball. IMHO. Good Luck.

2.1's stock camera application is suppose to open up more options, so...be patient
