Flashing my first Custom ROM

Ok I have rooted the phone.....made several Nandroid Backups (paranoia)....downloaded the rom I want and now about to flash. The part that I am confused about is the data/dalvik/cache wipe. What do each of these do? These aren't gonna erase anything off of the SD card will it? Is there anything that I haven't thought of before I install my first custom rom?

only if it had sd in the name would it touch your sd card
like wipe sd ext etc etc
