Sorry, series of noob questions

I got my evo a few days ago (unfortunately with the OTA), and yesterday used unrevoked3 to root it. Noob that I am, I now have a series of questions which, in retrospect, I probably should have asked before I rooted...

Here they are:

1) Can I now flash custom roms? If so, do I just put them on my sd and follow the instructions on clockworkmod?
2) Can I follow the standard steps for full NAND unlock with clockworkmod installed? If not, can I somehow uninstall it and reflash a stock recovery?

rooted via unrevoked3 and able to flash roms. i boot into recovery and flash from there. havent tried from rom manager
